1. Cool down your big game immediately after field dressing.  Big game spoils quickly when insulated by the ground or snow.  If you cannot hang it up promptly, prop the animal up with a log, rocks, etc.
2. Cut the game into quarters.  Cut between the third and fourth ribs, and through backbone to complete quarterly.  Pelvic and breast bones of big game are tough and will require a good saw or axe.
3. Bag each quarter with game bag and hang to protect meat from any contaminants.  Bag will allow air circulation to promote cooling.
